Today is reveal day for Secret Recipe Club, the club where food bloggers are assigned each others blogs in secret, cook one of their recipes, and blog and share the results.
This month we were assigned the blog Veggie Grettie, a blog written by Gretchen, a Certified Nutrition Specialist. After many years with health issues, Gretchen learned that through a healthy diet and exercise she is able to control her condition and indeed feels healthier than she has ever been. Oh, and she also has a bunch of tasty recipes on her blog!
This slaw doesn’t have much to it’s directions – just equal parts shredded carrot and apple topped with raisins, cinnamon, walnuts, and fresh squeezed orange juice. Everything is pretty much to taste.
I really liked this slaw. The carrots are sweet and crunchy and were a surprising compliment to the apples. Though with the cinnamon, both smell and flavor, there were a couple times I bite into the slaw wanting a big bite of apple pie! That’s nothing against this recipe, just shows what an addict I am to apple pie (Fall is coming up, can’t wait!).
I had this slaw as a side with my lunch, but could see it being served as a salad at dinner. It was refreshing in the summer, but I see this really being great in the Fall when apples are in peak season.
So bottom line, should you try this apple carrot slaw? Yes!
Ingredients
- shredded apple
- shredded carrot
- fresh orange juice
- cinnamon to taste
- raisins
- chopped walnuts for garnish (we used ones with sugar coating!)
Instructions
- Put equal parts shredded apple and carrot in a bowl and mix well. Squeeze the orange juice onto the apple and carrot, sprinkle with cinnamon to taste and mix to incorporate.
- If you plan on serving the slaw immediately, go ahead and mix in the raisins and chopped walnut. Otherwise wait until you are ready to serve the slaw and add them at that point or allow people to top their slaw themselves.
