I love buffalo chicken. And I love dip. So it goes without saying I love buffalo chicken dip. What isn’t to love about a hot, spicy, cheesy dip?
With New Year’s Eve fast approaching we thought it would be fun and timely to share not one, but TWO of our buffalo dip family recipes with you.

Normally Rachel and I like to post just one version of a recipe; the one we like the most. But both versions of this buffalo dip are a hit with our family. One comes from my Aunt Sherry, the other from our family friend Betty (whose beautiful and delicious cream cheese cut out cookies we shared yesterday).

Both recipes call for buffalo wing sauce, cream cheese, and either blue cheese or ranch dressing, along with a few variations beyond that base. I think the dressing is really the key ingredient that set’s these two recipes apart. Do you prefer your wings with ranch? Try Betty’s (photo below). More of the blue cheese type? Check out Aunt Sherry’s (photo above). Honestly, both are great, so you can’t go wrong.

In terms of heat, this dip has a mild kick to it from the buffalo wing sauce. I like a lot of heat but for Rachel’s sake I followed the measurements exactly as specified, and she thought it was a good balance. But if you’re like me and want your nose to be twinging, feel free to throw in more buffalo wing sauce or some red pepper flakes to really kick it up.
Since we have a member of the household with a strict 7pm bedtime, we’ll be partying local for New Years Eve (i.e. watching a movie after Baby Boy goes down for the night, then heading to bed ourselves at 9pm). But if you are hosting a party or bringing food to one consider bringing one of these dips and a bag of chips. It’s great with a cold glass of beer.

Ingredients
- 1 8 oz. package Cream Cheese (cubed)
- 1 1/2 cups finely chopped cooked chicken
- 1/2 cup blue cheese salad dressiong
- 1/2 cup Buffalo wing sauce
- 2 stalks celery, finely chopped
Instructions
- Mix all ingredients in microwaveable bowl.
- Microwave on HIGH for 5 minutes (or until cream cheese is melted and mixture is heated through) Stir after 3 minutes.
Ingredients
- 1 1/2 cups finely chopped cooked chicken
- 1 8 oz. package Cream Cheese (cubed)
- 1/2 cup ranch dressing
- 1/2 cup buffalo wing sauce
- 1 cup cheddar cheese, shredded + more for topping
Instructions
- Preheat oven to 350 degrees.
- In a sauce pan, heat chicken and hot sauce. Add cream cheese, stir till blended. Add ranch dressing, stir. Add 1 cup shredded cheddar cheese, stir until melted.
- Pour mixture into a 9 x 13 casserole dish. Cover with shredded cheddar.
- Bake in oven until bubbly. About 10 minutes.

I took this buffalo dip and left out the ranch/blue cheese. stay with me… I then took cresent rolls and wraped up the thick buffalo dip and cooked them for 11/13 min.@350 (as says on package) Then dipped them in ranch/blue cheese dressing…oh my.. they were so good!
OOh that sounds inspired! We haven’t done anything buffalo here lately- that may have to be the next experiment!
My friend and I made Betty’s recipe except, we mixed up all the ingredients in a large bowl and then cooked just a bit at a time in a smaller Crockpot for our super bowl party. It was delicious. We put the leftover in some Tupperware and it kept well for the couple of days later that it lasted. It was so good!
So glad to hear Amber! When we make it, it never lasts long enough to keep as leftovers lol
