It seems to be one of those weeks (months?) where there just isn’t enough time. Which is funny considering it’s a leap year and we got an extra day this week. (Side note – I think it should be mandated that everyone have off on a leap day.)
We didn’t even get around to food shopping this week, instead making do with what is in our pantry or frozen. If it wasn’t for our friends inviting us over for pulled pork (thanks for trying our recipe Michelle and Chip!) we’d have had pasta and frozen marinara for dinner 3 nights in a row.
A simple recipe seemed like just the thing we needed to share today. This is a super easy guacamole recipe. It’s how we make our guacamole during the busy week nights when Baby Boy is shrieking for attention, the dog is acting up, and we throw together flautas or quesadillas to get dinner on the table and in our bellies fast.
