We love Mexican food. We eat Mexican for dinner at least once a week, and sometimes every night for a few nights in a row. Some of our favorite dishes are enchilada rice bake, chicken and cheese flautas, quesadillas, taco salads, and of course just plain old taco night. (Incidentally, I highly recommend you make homemade taco seasoning rather than from the store bought package – so much tastier. We use this recipe from our foodie friend Rachel from Rachel Cooks).

With all the Mexican we eat, of course we need the sides that go with it. We’ve shared our easy guacamole recipe before; today we’re sharing our addictive and simple salsa recipe.

The fresh ingredients are what make this salsa heavenly. Combine all ingredients and resist the temptation to dig in right away, allow it to chill in your fridge for at least an hour to give the flavors time to develop and harmonize.

Can’t wait to make it with fresh from the garden summer tomatoes. Yum yum.

If you like don’t like heat, avoid the jalapeno. That said, don’t wimp out. I recommend you try at least a little to start and adjust  to your taste from there.

This salsa goes great on just about any Mexican dish. We top our salads or taco’s with it, or just scoop it up with tortilla chips.

Ingredients

  • 4 tomatoes, chopped
  • 1/2 cup finely diced red onion
  • 1/2 jalapeno chili, finely chopped
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon kosher salt
  • 2 teaspoons lime juice

Instructions

  1. In a medium bowl, stir together tomatoes, onion, chili pepper, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving.
