Zucchini Pickles & Moving

Well hello. It’s been awhile! Sorry about that. It has been a whirlwind of activity over here!

As I mentioned in the last post (back in April, yikes) we put our house on the market. It ended up selling quicker than we thought which is great! But meant we really had to hustle to get ourselves ready. So it’s just been a blur these past few months of getting the house ready to be sold, selling it, finding a new home, and packing all our stuff up for storage. There was a one month lag between having to be out of our house and moving into the new one so we have been staying with Rachel’s parents who graciously put us up, noisy toddlers, shedding dog, and all.

It’s been a challenge being homeless, so to speak. We are all sleeping in one room and our little guy, who is 18 months old, has taken the liberty of waking up around 4:30 or 5 am hollering for us, since he can see us. He’s tired and needs more sleep,  but holding him, rocking him, having him in bed with us, leaving him in bed by himself, nothing seems to help him go back to sleep. He has gotten better as the weeks have gone on but we are still consistently up pretty early with him, and he is just wiped out when it comes to nap time.

So as of this writing we are just a few days away from moving into our new home. Then new madness begins as we work to rip up rugs, sand hard wood floors, strip wall paper, paint, moving stuff out of storage, and all the rest that goes with moving into a home. Exciting times but busy times!

Today is Secret Recipe Club reveal day. A club where we are assigned another food bloggers blog and tasked with cooking something from their site. We were assigned Chit Chat Chomp, written by Leigh. With summer in full swing and everybody having BBQ’s and picnics, we thought it would be a great idea to try these Zucchini Pickles that Leigh had shared. They were super easy to make and had great flavor. A good compliment to a BBQ, which is what we look forward to doing plenty of once we get moved in and settled at our new home. Thanks for the delicious recipe Leigh. And thank you friends for keeping tabs on us even as we’ve been absent here on the blog. Looking forward to life being a little less crazy very soon!

Zucchini Pickles & Moving

  • 2 zucchinis, sliced
  • 1 white onion, thinly sliced,
  • 2 tablespoons kosher salt
  • dill sprigs
  • 1/2 cup cider vinegar
  • 1/2 cup white wine vinegar
  • 1/2 cup white sugar
  • 1 teaspoon chilli flakes

  1. Place the zucchini, onion and salt in a colander, toss to coat and place over a bowl. Cover the zucchini and refrigerate overnight. (Salting the zucchini overnight drains out the moisture and helps create a crunchy pickle)
  2. Drain and rinse the zucchini well then place in a 1 1/2 cup-capacity jar with the dill.
  3. Place the vinegar's, sugar and chilli in a saucepan over high heat and stir until sugar is dissolved. Bring to the boil and cook for 5-8 minutes or until just thickened and syrupy. Pour over the zucchini and seal the jar with a tight-fitting lid.
  4. Store in a cool, dark place for up to one week.

We always had a big garden when I was growing up, and my mom made and canned zucchini pickles every summer. I think the onions were my favorite part! She did not use the chili flakes, but I bet those really add to the overall flavor.

Good luck with all the moving and settling in! We just moved last summer and are still getting things fixed up and organized around here. It’s fun, though. Enjoy.

I hate moving – we did it last October and I’m good for the next decade or so! Really wishing I had my old garden after seeing this recipe, know exactly what I would do with all those zucchinis 😀

moving is terrible, but these pickles look wonderful. I’ve never thought of making zucchini pickles before, but I will this summer. Great srC post
