Having a newborn, I have discovered, means meal preparation time has to be quick or you won’t get to sit down to eat. This delicious but simple shrimp scampi recipe hits the spot while being low on cleanup and prep time. Whether you had a long day at work or have to sneak a meal between baby naps, I guarantee you’ll like this shrimp scampi. Oh, and it’s adapted from a weight watchers recipe. Bonus points for that.

Ingredients: 1 Large frozen banana, cut into chunks 1 and 1/2 cups frozen blueberries 1 cup skim milk 1/2 cup low-fat vanilla yogurt 2 tablespoons frozen lemonade concentrate 1 teaspoon grated lemon rind 1/8 teaspoon nutmeg Place all ingredients together in blender and mix until smooth.
