Happy Monday!

Happy Monday indeed. For those of us on the East Coast, things are starting to get  back to normal as electricity is restored and gas lines (start to) get better. Not there yet, but we are slowly making progress.

It’s also a Happy Monday because exactly one month ago today our second little boy was born (which was, coincidentally, also a Secret Recipe Club reveal day as well). So, Happy One Month Birthday Baby Boy!

It’s really hard to believe that this boy is 1 month old. Then, when I really think about it, it’s even crazier that I also have a 19 month old boy. Two kids. When did that happen?! But, I adore them both. And it is only somewhat bittersweet just how quickly they grow.

So, as I was saying, today is reveal day for Secret Recipe Club. We were assigned the blog The Pajama Chef. Sarah, of Pajama Chef, has been baking since she was a little girl – which of course came with plenty of kitchen mishaps –  1/4 cup of baking soda in cookies – yikes! – that’s up there with my brother Jim who mistakenly added 1 cup of oil to brownies! She does most of the baking and cooking on her blog, but from time to time her husband Ben contributes a post. His posts are dubbed “OTT” or, One Tablespoon Testosterone. Love it! (Hey, since I do most of the posting here, maybe Rachel should get a column with a clever name too. Hmm… Can’t think of anything clever though. Fail)

Anyway, I gravitated to this post from Ben on Chocolate Chip Cookie Bars. Ben promised these would not disappoint, and after making them and sharing with family we enthusiastically agree.

Nana has been making “Chocolate Chip Cookie Bars” for the past year or two. Her recipe is basically just her cookie recipe spread out and baked in a pan. She does that because at 93 years old baking all those cookies is tiring. The mere fact she is still baking deserves applause, and her bars are good. But you definitely need to adjust your cookie dough recipe for baking bars as opposed to square cookies. Ben hit the nail on the head (testosterone analogy intended).

These bars are soft and chewy and perfect. We topped with melted chocolate chips as Ben instructed, and they were great, definitely a great recipe for a chocoholic. If you want to go a little easier on the chocolate (Why would you?) I think these bars would be just as fantastic with no chocolate on top. But I leave that to you!

Chocolate Chip Bars

Chocolate Chip Cookie Bars

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup canola oil (vegetable oil does NOT work)
  • 1/2 cup sugar
  • 3/4 cup packed light brown sugar (although I did use dark brown sugar)
  • 1 large egg
  • 2 1/2 teaspoon vanilla
  • 12 oz semisweet chocolate chips
  • 6 oz semisweet chocolate chips for topping

Instructions

  1. Preheat the oven to 350 degrees. Grease a 13 x 9 pan.
  2. Combine the flour and baking soda in a bowl.
  3. In a large bowl, beat the canola oil, sugar, and brown sugar. Beat in the egg, then beat in the vanilla. Gradually blend in the dry ingredients. Fold in the chocolate chips (12 oz).
  4. Spread the dough in the pan and bake for 15 minutes. Remove the pan and immediately place the chocolate chips for the topping (6 oz) on the warm dough. Place the pan back in the oven for five minutes.Remove the pan and use a spatula to spread the chocolate chips around.
  5. Let cool (or don’t bother waiting) and enjoy!
