Hello friends. How are you? Does it feel like Spring yet by you? After a biter cold, snowy, and long winter (seriously, that Groundhog better watch out if I get my hands on him) it is beginning to feel a little like spring. Just barely! In New Jersey we have still had single digit degree mornings and highs in the low 30′s, but the days are getting longer and we seem to be getting more and more “warmer weather”. At last!

Today’s post is for The Secret Recipe Club, a food blogger club we belong to where we are secretly assigned another food blogger whose website we cook or bake a recipe from. This month we were assigned Vanderbilt Wife, hosted by Jessie. Jessie is a stay at home Mom and freelance writer who started her blog to get her to write more. This is something I relate to in a way, as part of my reason for starting this blog way back when was to learn more about the process of launching and running a website.

Jessie blogs a mix of family recipes and “family” recipes. By “family” I mean, recipes that are a hit with the fam and thus become regular family recipes. Again, something I can also relate to, as with our own blog, many of the recipes we feature are not family recipes per se, but are so enjoyed that we need to blog about them so we can refer back to them.

This Blueberry Cream Cheese Coffee Cake is one recipe of Jessie’s that is such a family hit it has become a “family recipe” :) . When Rachel and I saw it, we both agreed it was something we had to try!  Jessie also has many delicious looking recipes on her site, like her Cranberry and Chocolate Chip Scones which were nearly made instead of this coffee cake – and indeed will be made next weekend .

Verdict: Delish. A worthy addition to our blog and a new Keenan “family” recipe for sure. This is a great coffee cake to enjoy with a nice cup of tea (or coffee if you prefer) on a lazy Sunday afternoon as I did while the babies were napping.  Super easy to make too! Blueberry Cream Cheese Coffee Cake

Ingredients

  • 1/4 cup butter, softened
  • 4 oz. cream cheese
  • 1 cup sugar
  • 1 egg
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cup fresh or frozen blueberries, unthawed
  • cooking spray
  • 2 tablespoons turbinado sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Beat butter and cream cheese together with an electric mixer until creamy; gradually add the 1 cup sugar. Add egg; beat well.
  2. Whisk together flour, baking powder, and salt; stir into butter mixture. Stir in vanilla; fold in berries.
  3. Pour batter into a 9-inch round cake pan sprayed with cooking spray. Sprinkle top with turbinado sugar and cinnamon.
  4. Bake at 350 F for one hour; cool on a wire rack.
