Lemon Mini Cheesecake

Howdy folks. With a delicious mini-lemon cheesecake recipe AND a giveaway of beautiful wall lettering, you are in for a real treat today (see what I did there).

Life is busy. Everyone’s is, right? And that makes time just fly by.

Well, for us, those first few weeks seemed to go sooo slow when our first son was born (probably because we weren’t really sleeping). But in what feels like a blink of an eye, he is now 2 1/2 years old and he has a 1 year old brother. I both marvel at how big they are and dread time going by even faster.

My memory is shot – because of them, no doubt – so I record here now, for me (but please feel free to read) a few cherished memories of and with these little boys as of late. I jot them down before the passage of time and my own swiss cheese memory fades them away.

- The older one including Chocolate in his God Blesses before bed one night

- The younger one thinking he is absolutely the coolest thing pushing and walking behind the Thomas the Tank Train toy (he doesn’t walk yet, but is a super fast crawler)

- The older one having his mind blown that he and his brother are boys, and that so is Daddy, though Daddy is also a man (how can I be both a man and a boy, he wonders)

- The younger one shrieking in joy when I walk in the door. Ear drum shattering shrieking.

And… already my memory falters, and things I had wanted to remember are escaping me at the moment.

But so it goes. And some time from now, Rachel or I will see something, or be reminded of something, and that will trigger a memory with these boys. And we will share that precious memory, and reflect fondly on it, and of our time with these boys.

Rachel found a quote she liked (it’s from Mother Theresa), and chose the font style, color, size – all of it. Then Wise Decor does their magic and within a few short days boom – package at your door. As luck would have it we had just completed refinishing the dining room (a month long DIY project – ugh). So, the room was ready for the decal lettering. Super simple! The words come pre-spaced on a rolled sheet of paper, you just peel the back layer off and rub over the perfectly spaced wording to apply it to your wall. The people at Wise Decor were also nice enough to send a bonus “Welcome” decal which is going up as soon as the entry hallway is repainted! So note, you don’t need to actually do a month long DIY project to apply the decal – you just apply it to the wall and you are all set. But if you had seen what the room, and the walls, looked like before (Crumbling plaster!) you’d understand!

Anyway. It really adds a nice accent to our room. We like it. It’s very much “us”.

Mini-Lemon Cheesecakes

Ingredients

  • Crust
  • 2 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • Filling
  • 4 packages (each 8 oz) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 eggs
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla
  • Topping
  • 1 cup sour cream
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla

Instructions

  1. Crust: In a medium bowl, combine graham cracker crumbs and butter. Press into bottom of prepared muffin cups and freeze.
  2. Filling: In a large mixer bowl, meat cream cheese and sugar on medium-high speed for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in lemon juice and vanilla. Fill each cup about three-quarters full. Bake or 20 to 25 minutes or until they look puffy and the centers have a slight jiggle. Cool on a rack for 10 minutes (do not turn the oven off).
  3. Topping: In a small bowl, combine sour cream, sugar, lemon juice and vanilla. Pour mixture into the center of each cooled cake and spread out to edges. Bake for 5 minutes more. Cool on a rack for 2 hours. Cover and refrigerate for at least 6 hours before serving.
