Have you had enough of this extreme heat yet? Rachel and Baby Boy have. And, I’ll admit, I’m starting to reach even my limit for tolerance of this weather. The extreme heat and humidity sucks all the energy out of us and just about destroys all inspiration to cook – and you can forget about baking.

But just because we’re in the middle of an epic heat wave doesn’t mean we have to go without tasty treats. This No Bake Brownie Batter Cheesecake will allow you to indulge in chocolaty brownie goodness without ever turning on your oven. A big thank you to Lauren from Lauren’s Latest for sharing this – as we’ve made it four times already this past month (before you think poorly of me, three of those times were for company or a party).

These No Bake Brownie Batter Cheesecakes have a graham cracker and cocoa powder crust. Cream cheese and brownie mix, combined with whipped cream, form the base creating a chocolaty mouse. Top with more whipped cream and mini chocolate chip. Perfection.

We changed Lauren’s recipe up slightly to make it easier – read, we’re lazy. Instead of making our own whipped cream we just bought a frozen container to use. But if you want to make your own, head over to Lauren’s blog to see recipe and instructions.

No-Bake Brownie Batter Cheesecake

Ingredients

  • Crust:
  • 1 cup graham cracker crumbs
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated sugar
  • 1/4 cup butter, melted
  • Filling:
  • 1 cup low fat Cool Whip
  • 1/4 teaspoon vanilla extract
  • 1-8 oz. package low fat Cream Cheese, softened
  • 1 1/2 cups box brownie mix {the powder}
  • 2 tablespoons milk
  • Topping:
  • remaining Cool Whip
  • 1/4 tsp vanilla extract
  • mini chocolate chips

Instructions

  1. In a small bowl, mix all ingredients for crust together until moist. Press into the bottom of a pie plate. Set aside.
  2. Place cream cheese, brownie mix, vanilla, and milk into a mixing bowl and whip until smooth. Gently fold in the cup of whipped cream. Spoon over top the crust. Top with remaining whipped cream mixed with last 1/4 tsp vanilla, and garnish with mini chocolate chips. Refrigerate until ready to serve.
