Taste Test Thursday is a day late this week, but I had a good excuse. I made these No Bake S’mores Brownies for my co-worker Elysa, as it’s her last day before she moves on to another company. I couldn’t post because she reads this blog, along with a few other coworkers (hi!) and she would have seen them and known that they were made for her. (Besides that, I wanted them to be fresh for Friday, so held off on making them until Thursday night).
Elysa is a fellow foodie and often brings in tasty treats for the office. The best, in my opinion, being cake pops. I had never heard of such a thing before she brought them in, but they are fantastic. Ever had them? Fan.tas.tic.
A few months back I brought in a few S’mores Bars that I had made. Elysa loved them, and knowing she is something of a chocoholic like myself, I wanted to make something similar to share on her last day. The problem is the 90+ degree weather in NJ and the 15 month old baby and pregnant wife I live with. Turning on the oven was a no go.

Even if isn’t too hot to turn on your oven, I think you’ll appreciate both how simple these No Bake S’mores Brownies are, and how tasty they are.
Confession time: I had to try one. I know, I know. They’re for co-workers. But hey, I can’t very well share a recipe with you if I haven’t tried it myself, right? Well, that’s the excuse I’m sticking with anyway.

Ingredients
- 2 1/4 cups graham cracker crumbs
- 1 1/2 cups mini marshmallows
- 3/4 cups semi sweet chocolate chips
- 1 stick butter
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
Instructions
- Line a 9 inch square pan with foil, leaving some hanging over the sides and spray the foil with non stick cooking spray.
- Mix graham cracker crumbs, 3/4 cup marshmallows and 1/2 cup chocolate chips together in a mixing bowl. Set aside.
- Melt the butter in small pot and stir in sugar, egg and vanilla. Stir over medium low heat until slightly thickened. Cool slightly.
- Add sugar mixture to graham mixture and stir well. Fold in remaining marshmallows and chips.
- Press mixture into pan and refrigerate for 30 minutes. Remove from pan using foil overhang, cut and serve.
