Worlds Best Carrot Cake + A First Birthday

 

Guess who turned ONE year old this month?

What an absolute sweetheart this boy was (is). He was in such a good mood (even despite skipping his afternoon nap) – just all smiles (and sometimes snuggles) all day.

One year ago this little boy caught Rachel and I by surprise when he came a few days early. Unlike with our older toddler who came a week late and was induced (thus a calm, scheduled trip to the hospital),  this baby boy decided he was ready to come play. So, a frantic Friday morning of getting parents to over to baby sit, wrapping up a SRC post (HA!) and driving fast (but not too fast!) to the hospital.

We celebrated Baby Boy’s birthday with friends and family. In true Keenan fashion we had a feast to celebrate. Eggplant rollatini, chicken stuffed with prosciutto, homemade meatballs, and penne vodka.

We baked a carrot cake ( the best carrot cake recipe, in our shared opinion) that all participants enjoyed except for the birthday boy! Unlike his older brother, who kept a firm hand in his cake while he ate it (to prevent us from taking it!) Baby Boy wasn’t such a fan of icing. He did like the cake itself, once he got past that sweet stuff. It’s ok. He’s like his mother on that front, more a salty crunchy fan than a sweets man. The boy loves cheese – perhaps I could have made him great grandma’s cheese pie? Hmm. Maybe next year kiddo.

We had a delightful day celebrating. It was wonderful sharing the day with this smiley boy and all those who love him.

Like many parents with one little one already here, when we first found out we were expecting this little guy I was a little worried. I loved Toddler Boy (then he was just a Baby Boy himself) so much, and I was just so about him. Even though I knew I would like this little one too, I couldn’t fathom how I could love another child as much as the one we already had. Yet once this boy was born and I first held him that concern immediately disappeared. What seemed impossible happened. Our hearts just opened up more. It’s been pure delight with this little guy. He makes me smile every day.

Looking forward to sharing another year with this amazing little guy.

World's Best Carrot Cake + First Birthday Party

Ingredients

  • For the cake:
  • 4 eggs
  • 3/4 cups vegetable oil
  • 1/3 cup apple sauce
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 3 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 teaspoons ground cinnamon
  • pinch of nutmeg
  • 3 cups grated carrots
  • 1 cup chopped pecans (optional)
  • For the Frosting:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round cake pans.
  2. In a large bowl, beat together eggs, oil, apple sauce, sugars and vanilla. Mix in flour, baking soda, baking powder, salt, nutmeg, and cinnamon. Stir in carrots. Fold in pecans (optional). Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stack and frost between the cakes and all around. Enjoy!
