Creamy Macaroni and Cheese Recipe & Giveaway

Macaroni and Cheese is one of the ultimate comfort foods. I don’t think I need to profess why that is. :)

What I do need to do is to beg you to make this particular Mac & Cheese recipe. Just once. Give it a go. Then come back and let us know what you think. Because I’m betting your going to say it’s up there as one of your favorite versions (it is okay to have multiple favorites!).

One of the secret ingredients to this recipe is the sour cream. The other is, without a doubt, the extra sharp cheddar cheese. It adds both depth and texture to the dish. So much so that I like this recipe better without any bread crumb, panko, or extra cheese on top – 3 toppings I usually like on my Mac & Cheese.

We have a cheese addiction in this house. More so than chocolate. No joke, I have a couple blocks of various cheeses stocked in our fridge at all times. Mozzarella, Cheddar (Of different varying degrees of sharpness), Parmesan, American. Cheddar in particular is a problem of mine. I can just open a package and eat half a block with a big loaf of crusty bread or some pretzels. I work hard to control myself so I don’t do that (often). It’s hard!

So cheese and fun giveaways aside, it’s been a rough week so far. Both Baby Boy and Toddler Boy are sick again after kicking their colds last week. The worst is that Baby has Bronchiolitis or some form of it. Basically a virus has inflamed his little lungs and is making it harder for him to breathe. He wheezes lightly and his breathing sounds junky, like too much phlegm. Him being only 3.5 months old, Rachel took him to the pediatrician, who gave us that diagnosis. It isn’t too serious for most people – the virus is very common and we may very well have had it, and Toddler probably does have it, but because we’re all bigger and older it doesn’t effect us the same. But Baby Boy is still a little guy, so it’s tougher on him.

He’s being a real trooper. The happiest and most smiley sick baby you’ve seen. If not for his coughing and wheezing you really wouldn’t think he was sick. So, he’s on a nebulizer every few hours with medication to help his breathing. This is our first time going through this with our kids, Toddler lucked out and never got sick like this. Seeing your little one with a breathing mask on is pretty rough. Even though I know he’ll be fine, and that this is just to help him breathe better, it still really is awful seeing your child like this and being pretty much powerless to help. I really can’t do much besides wait for this virus to clear his system (besides help him breathe easier with the medicine and keep a close eye on him).  Maybe that’s the part that is so hard, that feeling of powerlessness. I’m sure this won’t be the last time I feel this way when it comes to my children – I just hope it doesn’t happen to often.

Creamy Macaroni and Cheese Recipe


  • 2 cups uncooked elbow macaroni
  • 1/4 cup butter, cubed
  • 1/2 cup all-purpose flour
  • 1-1/2 cups fat free milk
  • 1 cup (8 ounces) light sour cream
  • 8 ounces process cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon pepper
  • 2 cups (8 ounces) shredded cheddar cheese


  1. Cook macaroni according to package directions. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
  2. Reduce heat; stir in the sour cream, process cheese, Parmesan cheese, salt, mustard and pepper until smooth and cheese is melted.
  3. Drain macaroni; toss with cheddar cheese. Transfer to a greased 3-qt. baking dish. Stir in cream sauce.
  4. Bake, uncovered, at 350° for 35-40 minutes or until golden brown and bubbly.
