My MOM shared some of this delicious salad with me for lunch yesterday. She used crushed pineapple in place of the oranges. Yum!
Ingredients:
- 1 1/2 cup chicken broth
- 1 cup chickpeas
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup couscous
- 1 can mandarin oranges (OR crushed pineapple)
- 1/4 cup fresh mint
- 1 tablespoon olive oil
- 1 tablespoon rice vinegar
Directions:
Combine chicken broth, chickpeas, salt, and pepper in a medium saucepan. Bring to a boil. Add couscous , cover, and remove from heat. Let stand 5 minutes.
Add oranges, mint, olive oil, and rice vinegar to the couscous mixture. Eat right away or chill and eat later -it’s up to you!
