Moving on.
Despite it being December and Christmas music being a constant while on car rides or cooking in the kitchen, the weather outside is decidedly not frightful. In fact, it’s been quite mild here in NJ. It’s the type of weather that has me yearning for spring (too soon to wish that?) and makes me want to wheel out the propane grill. So, I did that. I cooked up some burgers, and we enjoyed some unseasonal outdoor cooking with this tasty Broccoli and Cranberry Salad.

There’s not much to say about this recipe. It’s really quite straight forward and delicious. Bacon (or bacon bits, if you are short on time as we usually are) adds a nice salty crunch to the salad, while the dried cranberries and light mayo dressing contribute a subtle sweetness. The broccoli is raw and has a nice crisp snap in each bite. Oh, and did I mention the bacon? (It’s worth mentioning twice).
This salad is good enough to eat by itself – which we’ve done – or goes great with some burgers or chicken. While we see ourselves (and you) making this salad for summer bbqs, we hope you’ll make it soon to bring you back to the lazy days of summer.
Now for a none food related paragraph. Proud Daddy Moment!
Baby Boy is getting so big. I love him. He has been trying so hard to crawl – he has figured out that he needs to lift his butt and kick his legs, but hasn’t quite realized he needs to pick his head up off the ground. Pretty funny to watch.
But when he isn’t impersonating a tripod he likes to hold our hands and walk all around. He takes big steps and chases after Luna. He certainly knows what he wants, and he wants that doggy. He chases her, with us holding his hands for support, right into her doggy crate. We try to steer him elsewhere, but he won’t let you detour him. He wants to stand in front of Luna and squeal in delight. He loves that dog. And we love him.
Ingredients
- 4 cups broccoli florets, cut into 1/2-inch pieces
- 1/4 cup red onion, chopped
- 1/2 cup sharp cheddar cheese, cubed
- 1/2 cup dried sweetened cranberries
- 1/2 cup cooked bacon, crumbled (we use 1/3 cup bacon bits)
- 1/4 cup sunflower seeds (optional)
- Dressing
- 1 cup light mayonnaise
- 1/4 cup sugar
- 2 tablespoons red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Combine all salad ingredients in a large mixing bowl and mix well.
- Combine dressing ingredients in a small mixing bowl, then mix until thoroughly combined using a fork or wire whisk.
- Add dressing to salad and mix well.
- Refrigerate 1 hour.
