Roasted Cauliflower with Parmesan

I suppose you could call this the guilty post. The “I’ve been posting too many decadent desserts so now I need to repent and do a healthy recipe” post.

But that would imply I’m sorry about those Oreo Cupcakes, or the Apple Dumplings, or the S’mores Bars; and I’m not sorry. I enjoyed them immensely (in moderation!) and I’m sure you enjoyed seeing them.

But…

It’s so easy to throw some sugar and butter together and get something delicious. It is much more challenging to take a vegetable and make it delicious loading it up with extra calories and fat.

And since we don’t always do such a good job about eating our veggies, we thought we’d take the challenge. So to the food blogosphere we went, and we found this Roasted Cauliflower with Parmesan recipe.

Today’s Taste Test Thursday recipe comes from Kalyn’s Kitchen. Kalyn features delicious recipes aimed at being healthy. And in my book, that is a win-win.

As I mentioned before, in my younger years I naively would turn my nose to anything labeled “healthy”. Of course, when I was just a pup in high school or college, I could eat anything I want and get away with it. But being (a little) older and spending most of my day sitting stationary, working in front of a computer, things don’t work that way anymore. So I’m a big fan of recipes that are both healthy and tasty.

Don’t tell my Mom but I think I love cauliflower now. Roasting them in the oven made them nice and crispy. And the moderate amount of parmesean cheese and salt made them savory enough to want more.

You’ll probably want to eat them all in one sitting otherwise you’ll lose that nice crunch. But trust me – these were so good that isn’t a problem. I was shocked when I realized between Rachel and I we had eaten an entire head of cauliflower. :)

Roasted Cauliflower with Parmesan

Ingredients

  • 1 head cauliflower, cored and cut into bite-sized pieces
  • 1+ T olive oil
  • salt to taste
  • fresh-ground black pepper to taste
  • 4 T freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400 degrees. Line a cookie sheet with foil, then spray with non-stick spray.
  2. Place cauliflower pieces into a large bowl. Add the olive oil and toss until all pieces are lightly coated. Add salt and black pepper as desired. Add grated Parmesan. Toss until combined.
  3. Roast cauliflower until edges are browned, turning every 15 minutes. Roast 35-40 minutes or until done. Serve hot.
