Blueberry Yogurt Pancakes

Every weekend we have our morning routine. On Saturdays I make waffles or pancakes with our boys, and on Sunday’s we buy bagels. We tend to skew towards waffles, as we are big fans of the Club Soda Waffles we posted way back. But every now and then we’ll change things up and make pancakes.

The boys help me cook. I pull out all the ingredients and measuring cups, bowls, and spoons. I help them measure things out and let them dump the ingredients in. Sometimes its a little chaotic as spoons are going in batter when they shouldn’t be or ingredients are dumped on the counter. But all in all, it’s fun, and it’s our Saturday thing. 🙂

So for this month’s Secret Recipe Club assignment, we decided on these Blueberry Yogurt Pancakes as originally posted by Sara at Cup Cake Muffin blog.  I love blueberries in my pancakes, and so does our older little guy (ever since we read the Curious George story where George helps make blueberry pancakes).

The pancakes were easy enough to make and we had all the ingredients already in our house (With the exception of whole wheat flour – so we just used regular flour). The boys enjoyed them and Rachel and I thought they were tasty too.

Our pancakes came out a little bit on the thinner side, so I might have put too much milk in or perhaps not using the whole wheat through off the ratio of wet to dry. Still, as you can see from the photos, they still cooked up great and came our delicious. I just mention this because my first batch cooking really spread out so be sure to give these a little extra space at first.

Oh and a quick side note – I was super super tempted to make the Nutella Swirl Buns Sara has on her blog. Sara said she made them for Christmas morning, which sounds like a fantastic idea. I might very well do that too. 🙂

    these pancakes look great! i love making pancakes/waffles with yogurt…and that reminds me, i have to make your club soda waffles again. when i made them for SRC awhile ago they were so good!
